Danish Crown Enhances Beef Quality Classification with Frontmatec’s Q-FOM™ Beef
Frontmatec is proud to announce that Danish Crown has begun implementing the Q-FOM™ Beef system to sort beef carcasses based on marbling—one of the most critical indicators of meat quality. Marbling directly impacts tenderness, juiciness, and flavor, making it a vital factor for consumers and producers alike. With Q-FOM™ Beef, Danish Crown ensures greater transparency, consistency, and value for its suppliers and customers.
The implementation marks a significant achievement in the ongoing commitment to innovation and quality in the meat industry. Q-FOM™ Beef is the result of the FutureBeefCross project, a collaborative effort between Frontmatec, Danish Crown, SEGES Innovation, and Aarhus University, with funding from GUDP between 2019 and 2023. The project aimed to improve beef classification methods, focusing on creating a more objective and standardized approach to assessing marbling.
Since 2023, the Q-FOM™ Beef camera system has been approved for beef classification in Australia, analyzing the cut surfaces between the 10th and 13th ribs. Building on this foundation, the FutureBeefCross project further refined the technology to assess the ribeye between the 4th and 6th ribs—an adaptation that aligns with European processing standards and enhances the precision of marbling analysis.
The integration of this advanced technology at Danish Crown’s processing plants in Holsted and Aalborg is a testament to the company's dedication to adopting innovative solutions that benefit both producers and consumers.
